Looking at the term gender performance[2] following Judith Butler, one must assume that gender in its general and broad sense is nothing natural or biological. Rather is gender a fluid term that exists in the way it is performed. Therefore in the game Assassin's Creed Odyssey one can look at how the two characters are performing their gender identity and thereby how a player can be a part of that performance.
